Avocado, (Pretend) Bacon, Tomato And Pepper Pasta

This is super simple, healthy and delicious.

You’ll need:

  • 1 ripe avocado
  • 1 pepper
  • 12 cherry tomatoes
  • Quorn bacon lardons
  • Pasta
  • Cheddar cheese

To begin with you need to brown the quorn bacon lardons by cooking them in a pan over a medium heat, then add the chopped tomatoes and pepper.  You need to cook this over a medium heat until the pepper and tomatoes soften.  

Cook the pasta in a separate pan and chop the avocado.  Once the pasta is cooked and drained, add the avocado to the pan so that it warms slightly.

I use Seeds of Change Spinach Trotolle because it’s delicious and makes me feel like I’m being healthy!

Then you just need to mix in the tomato, pepper and quorn.  

Dish it up and grate some cheese on top, enjoy!
